Organoleptic characteristics:

precious wine of great structure and complexity, with its distinctive garnet red colour, it fully fits into the typical traditions of historic Valpolicella wines. Surprising, intense, with an elegant velvety taste, a warm and spiced bouquet with hints of raisins, chocolates, toasted almonds, and a persistent cacao, tobacco and liquorice aftertaste. This wine is produced only in the best years and with a limited number of bottles.

Varieties of grapes:

A blend of Corvina and Corvinone (80%) and Rondinella (20%)

Harvest:

by hand in late September. Hand picked and graded grapes are placed in wooden boxes and left o DRY for about 4 months in a naturally ventilated loft, losing up to 40-45% of their weight.

Output per hectare:

24 hl

Vinification:

after drying, in January, the grapes are pressed and fermented with their skins at a controlled temperature for about 40 days.

Maturation:

for 36 months in new oak barriques

Refinement:

in bottle for about 12 months

Average analytical data:

alcohol content: 16% vol total acidity: 5.70 g/l
 dry extract: 36 g/l


Serving temperature:

16-18° C. It is advisable to uncork the bottle at least one hour before serving.

Amarone della Valpolicella “MAXIMUS” is a fine companion unforgettable special occasions, accompanying meat and aged cheeses with personality and elegance. Perfect as a meditation wine.
