Organoleptic characteristics:

a special wine with an unmistakable sweet flavour and intense ruby red colour, with fine and persistent aromas, full flavour to the palate, hints of cherries and spices. Its sweetness is clear and quickly contrasts the silky feel of its tannins.

Varieties of grapes:

A blend of Corvina and Corvinone (70%), Rondinella (25%) and Molinara (5%)

Harvest:

by hand in late September. Hand-harvested and graded grapes are placed in wooden crates and left to DRY for about 4 months in naturally ventilated lofts, losing up to 45% of the weight of the grapes.

Output per hectare:

20 hl

Vinification:

when drying is finished the grapes are pressed and fermented in their skins at controlled temperatures for about 30 days. Fermentation is stopped before all the sugars are turned into alcohol.

Maturation:

for about 6 months in oak barrels

Refinement:

in bottles for about 6 months

Average analytical data:

alcohol content: 13.50% vol total acidity: 6.10 g/l
 dry extract: 38 g/l


Serving temperature:

16°-18° C It is advisable to uncork the bottle at least one hour before serving.

Dining combinations:

Recioto della Valpolicella DOCG Lavarini is a pleasant wine for after-dinner conversation, and a perfect companion with aged cheeses, dry pastries and chocolate.
